Gingerbread Doughnut Muffins {Foodie Friday}

If you are still planning what to eat for Christmas here is a wonderful idea. these Gingerbread muffins are the perfect way to to start Christmas morning, or any winter day, really. They are light and fluffy, yet not overwhelming. The first time I made a gingerbread recipe, the result was a little spicy and it made me nervous to try again, but I am so glad I did!

Skillet Baked Spaghetti with Meat Sauce {Foodie Friday}

Ah spaghetti. I love spaghetti. It's a quick, easy and delicious meal. It's one of the few dishes my daughter, Caroline will eat, so it is served at our house just about weekly. I was flipping through America's Test Kitchen cookbook when I stumbled on this recipe that said I could make the whole meal in one pot. Say What?!

Homemade Applesauce {Foodie Friday}

Sorry for the craptastic photo, y'all. This time change is killing me. Don't get me wrong, I love that I get the sunrise back for a couple of weeks while I am driving to work, but that means it is practically dark by the time I get home from work. No light=bad pictures. Regardless, you should make applesauce. Because apples are on sale, they are healthy,this recipe is delicious, because I said so, and because you always do what I say, right? Right.

Apple Pie {Foodie Friday}

Apple pie. 
It's like a fall staple right? Apple orchards everywhere are selling them by the bushel and a peck (ha)-not to mention cider, apple butter all the rest. Truth be told I have never been a big baked apple fan. I like apples, but was never really into baking them. Let's just say some adventures in homemade applesauce made me a convert (recipe coming soon!)

 Last Monday DH and I took the day off and took Miss Caroline to the pumpkin patch. It was cold and even started to rain as we got ready to leave, but we had a great time. Caroline loved searching for the perfect pumpkin and playing in the blow up caterpillar.

Strawberry Cupcakes {Foodie Friday}



I love summer. I love strawberries. I love icing. I am an icing person. I think it’s the best part of any cupcake and it certainly is not an exception with these. The strawberry puree really just takes these off the charts. The original recipe made 34 cupcakes, so I have halved it below. If you needed a reason to visit your local Costco to buy berries en masse, now you have one ;)

What I'm Loving Lately -Cookbook edition {July edition}


I'll be honest. I only actually own one of these cookbooks, and that's because I got it at Goodwill for $ .69. While I'm too cheap to actually buy these for myself, I do get them from the library constantly. I think I have stated before that I have a problem with cookbooks, because there are generally only a couple recipes in each that I would actually make and eat. That is not the case with these. Each of these cookbooks has dozens upon dozens of recipes that I want to make and NOW.

Salmon with Honey Balsamic Glaze {Foodie Friday}

We're on a bit of a fish kick aren't we? Add this to the list of quick weeknight meals that your family is sure to enjoy. I love salmon because it cooks so quickly. This marinade takes 30 seconds to put together and it really kicks this dish up a notch. We try to eat salmon a couple times a month, and this recipe has made its way into our rotation.  Let’s make and eat dinner quick so we can get back outside and enjoy the sunshine!

Well hello! Welcome to 4th of July weekend! I'm about to head on our annual vacation, but wanted to slip this gem in before we left!
It's an old recipe I pulled out of the archives. When I started my cooking escapades a lot of what I made for dinner, DH was kind of blah about, but DH loved this one. He was looking for more and couldn’t stop telling me how wonderful it was. It’s so simple and basic. Sometimes you have to stick with the classics.

Glazed Carrots {Foodie Friday}

Funny story. When DH and I went on our first date we went to see The Polar Express at the movie theatre. It was a tradition for me to bring a 1 lb bag of carrots to the movies. This satisfied my need to crunch and was much better for me than eating butter covered popcorn. I have always loved carrots and had been taking them to the movies with me for years. However, this led DH to believe that I was some kind of health nut.
