Tilapia Piccata {Foodie Friday}

I don't know how, but my freezer somehow ended up full of fish..it must have been a really good sale...haha. We have had chicken piccata before, and loved it, so I figured tilapia piccata was going to be a winner. I was right. I never cared much for lemon tasting things growing up, but lately it has really been hitting the spot. This makes for a nice quick family dinner. My fillets were pretty small, so they cooked quickly, so keep the size of your fillets in mind while cooking.

Banana Cake with Cream Cheese Frosting {Foodie Friday}

Again with the bananas?! I know, I know. I can’t help myself. We have a lot of bananas..and I just  can't bear to see food go to waste. Anytime a banana starts to turn, I pop it in the freezer and save it for baking. This cake is easy to prepare and is a delicious way to use over ripe bananas. Bananas are fruit, right? So it’s healthy. This cake is a little more formal than banana ‘breads’. I love that it has icing on it too.  It’s still ok to eat this for breakfast…

Last Christmas my sister and I made these soft pretzels for our annual appetizer night. We were very happy with the results of our first time pretzel making skills. This year we went for something a little more finger food friendly. Pretzel Bites!

Peanut Butter Cup Cookies {Foodie Friday}


Since the twins were born, baking has been my therapy. For the first month or so I don’t think I did anything but bake. It wasn’t good for my waistline, but it’s certainly cheaper and tastier than actual therapy, lol. I don’t know why, but baking is extremely relaxing for me and it gives me a great feeling of accomplishment. These cookies are by no means difficult to make, but they are amazingly delicious. It’s a peanut butter cookie filled with the classic peanut butter and chocolate combination. I think we spent more time unwrapping the peanut butter cups than mixing the dough.

March Photo Shoot {My Photography}

The weather so was beautiful on Friday. I was on my way from work with the windows down and I decided it was the perfect day for a photoshoot. We haven't been outside for months, so when I got home I asked Caroline if she wanted to go outside and play. Of course she did, so she packed up all her toys in her little backpack, I changed her clothes, grabbed my camera, and we headed outside. Luckily the weather was so nice and the sunlight was so pretty, these pictures didn't require a whole lot of editing. These were taken in about an hour and just in my back yard (and on the unfinshed porch as you no doubt have noticed)..nothing fancy here.
