French Toast Sticks {Foodie Friday}

Maybe some of you grew up deprived, but growing up my mom would buy us the French Toast Sticks from the Schwan man. They were divine. French toast from the microwave in 30 seconds. They don't taste the same as traditional french toast, but they certainly grew on you.
I always loved them, so I was ecstatic when I stumbled upon a recipe for them. A homemade version, that I would argue has to be better for you, even if it is just because they are fresh. We only make breakfast about once a week at our house, but these are a favorite. Bite sized and completely dippable.

French Toast Sticks

Makes 2-3 servings
4-5 slices of bread
4 eggs
2 tablespoons cream or half and half
1/2 teaspoon vanilla extract
a generous sprinkle of cinnamon
Cinnamon Sugar topping:
1/4 cup sugar
2 teaspoons cinnamon.
Mix together the eggs, cream, vanilla and cinnamon in a shallow dish. Slice the bread into 'sticks'. Coat each piece in the egg mixture and place on a prepared baking sheet. Grease the baking sheet with a little oil or butter. Don't use parchment paper.
Mix together the cinnamon and sugar for the topping. Sprinkle a little cinnamon sugar over each stick. Bake under the broiler for 2-3 minutes. KEEP AN EYE ON IT. Not all broilers were created equal, so watch yours and adjust the baking time. What we are aiming for is for the eggs to cook but also for the sugar to caramelize on top.
After 2-3 minutes remove the sticks from the oven, flip and sprinkle on a little more cinnamon sugar. Bake for an additional 2-3 minutes. Now you're ready to serve.
