No Bake Cookies {Foodie Friday}

It's the basics really. Does anyone else ever have problems making the things that are supposed to be easy? No bake cookies and I have certainly had our moments. I almost always over cook them-why? Because I follow the directions. So let me help you out here. If something doesn't work, don't keep doing it. It's not you. It's the recipe.


I like my no bake cookies to be soft, not falling apart in my hands. I like them full of chocolately goodness. So the secret for me is not to boil them for a minute as the instructions often say. I bring them to a boil, then turn off the heat and stir for a minute before adding the oats. Perfect every time. I promise.



No Bake Cookies


Ingredients:


½ cup (1 stick) butter

2 cups granulated sugar
½ cup milk
4 tablespoons cocoa powder
½ cup peanut butter
2 teaspoons vanilla extract
3 cups quick-cooking oats

Directions:


1. Add the first four ingredients (through the cocoa powder) to a 4-quart saucepan.

2. Bring to a rolling boil.
3. Remove from heat.
4. Stir in the peanut butter and vanilla until smooth, then stir in the oats.
5. Drop by heaping tablespoons onto wax paper-lined baking sheets.
6. Let cool until set.
