So..I actually thought I had posted this recipe already. It works out I suppose, because it's the perfect thing to make for your 4th of July cookout. I took the recipe for Pistachio Lush and converted it to a chocolate version. (That's what girls who love chocolate do!)
It is simply to die for. What I love is that you can make the pudding and brownies from scratch or from a box (for those of us who are knee deep in unpacking boxes it'll be from a box, thank you!). It's flexible, and soo incredibly delicious.

Two Years Ago: Cheesy Chicken Enchiladas
Chocolate Lasagna
Layer #1
1/2 recipe Perfect Brownies:
2 eggs
½ cup +2 TB cups unsweetened cocoa powder
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon espresso powder (optional)
1/2 Tablespoon vanilla extract
1/2 cup (1 stick) butter
1 cup+ 2 Tb sugar
3/4 cups all-purpose flour
3/4 cups chocolate chips (semi sweet)
Directions:
Preheat oven to 350°F and lightly grease a 9x13 pan.
In a large bowl, add eggs, and beat with cocoa, salt, baking powder, espresso powder and vanilla. Stir until fully combined and smooth.
In a medium sized bowl, melt butter in the microwave (or melt in a small sauce pan on the stove). When melted, add sugar, and stir to combine.
Add warm butter/sugar mixture to the egg/cocoa mixture, stirring until smooth. Make sure the butter mixture is warm.
Add the flour and chocolate chips to the batter and stir until fully incorporated.
Put the batter into the pan, using a spatula to flatten it out. It will be pretty thin. Bake brownies about 10 minutes. Test for doneness by inserting a toothpick in the center of the brownies and making a little divit so you can see the center a bit. You should find moist crumbs, but no wet batter.
Cool pan on wire cooling rack.
Layer #2
1 cup powdered sugar
1 cup whipped topping
8 oz cream cheese
Mix together until smooth.
Spread on Layer #1
Layer #3
2 (3 oz) pkgs instant chocolate pudding or make your own
2 1/2 cups cold milk
Mix together and let sit 5 minutes.
Spread on top of layer #2. Refrigerate until set.
Layer #4
Spread with whipped topping and sprinkle with mini chocolate chips
Chill and serve.
